✨  Bar Mut Barcelona (Pau Claris, 192) opened its doors on 30 June 2005, when Kim Díaz, a film and advertising producer looking to balance his family life, decided to make a radical change in his career.

What started as a neighbourhood vermouth bar became, against all odds, an international phenomenon.

From the very first day and for nineteen months, the place was packed every day. Customers came for a vermouth and didn't leave.

The magic of Mut lies in its unique atmosphere: an intimate, carefully curated space with antique furniture, noble wooden tables, a marble bar and a handwritten menu that changes daily according to what the market offers.

Kim Díaz, who had worked as a producer for the Barcelona 92 Olympics and on campaigns for Isak Andic, had no prior experience in the restaurant industry, but he knew how to surround himself with the best professionals and, above all, apply a simple philosophy: top-quality products, honest cooking and impeccable service.

The name "Mut" comes from an anecdote: during a hunt, mute dogs (muts) are the most effective because they don't bark, they just work. That's Bar Mut: no fanfare, no big headlines, just excellence.

📜 History of Bar Mut: from vermouth bar to legend

The story of Bar Mut is the story of a gastronomic miracle. In 2005, Kim Díaz, born in Aravaca (Madrid) but living in Barcelona since the age of 18, was at a time of change.

He left the world of audiovisual production and, almost as a game, rented a premises on Pau Claris street that during the Republic had been a coal yard, then a shoe shop, later a fabric shop and finally a nightclub with a terrible reputation.

The space was 60 square metres, with a huge marble bar and a tiny kitchen. Kim invested everything he had (and some he didn't) in renovating it with antique furniture, period lamps and a display case to showcase the best products.

On the first day, he opened at 11am with the idea of serving vermouth and some preserves. By lunchtime, people started asking for something more. Kim improvised a Spanish omelette and some anchovies.

Word of mouth spread like wildfire. Within a few months, Mut had become a meeting point for Barcelona's bourgeoisie and the most demanding artists.

In 2006, food critic Pau Arenós (now director of gastronomy at El Periódico) wrote a column titled "The best of Barcelona is in a 60-metre tavern." That article skyrocketed Mut's popularity.

In 2007, Kim Díaz decided to expand and opened Morro Fi (Carrer del Bruc, 90), a more informal "tapas and drinks" bar.

In 2014 came Fonda (Carrer de Provença, 274), a place dedicated to market cooking with a wood-fired oven.

In 2017, Le Bouchon (Carrer de Pau Claris, 116), a tribute to French bistronomy. And in 2024, Fuego, a grill restaurant on Carrer de la Diputació.

But the heart of the empire remains Mut, which after 20 years retains its essence and loyal clientele intact.

🧑‍🍳  Who is Kim Díaz, the owner of Bar Mut?

Kim Díaz (Madrid, 1962) is one of Barcelona's most unique restaurateurs. Trained as a film and advertising producer, he worked on the 1992 Olympics and campaigns for Mango, Desigual and Purificación García.

A personal friend of Isak Andic (founder of Mango) and Vicente Todolí (former director of the Tate Modern), Kim is a worldly, cultured and discreet man. His jump into catering was accidental, but his success is the result of an obsession with quality.

Kim doesn't cook, but he is the "selector" of products: he gets up at 6am to go to the Mercat del Ninot, where he personally chooses the fish, meat, vegetables and fruit.

He is also responsible for the decoration of all his venues, combining antique furniture, chandeliers, Venetian mirrors and, in the case of Mut, a spectacular collection of straw hats hanging from the ceiling.

Kim is known for his generosity and his close treatment of customers. He has never wanted Michelin stars because he says they "would change the essence of the place."

His philosophy is: "Luxury isn't silk tablecloths, it's the product at its exact point." Despite his success, Kim keeps a low profile.

He doesn't give many interviews and prefers that his team's work speaks for itself. His group employs more than 100 people and his restaurants are a reference for lovers of market cooking throughout Spain.

🎬  The legend of Robert De Niro and other celebrities at Bar Mut

The fame of Bar Mut transcended Barcelona's borders when, during the filming of a movie in the city, Robert De Niro discovered the place and dined there for ten consecutive days.

According to Kim Díaz, De Niro would enter without bodyguards, always sit at the same table (the one at the back, on the right) and ask for "whatever is freshest."

He tried Cantabrian anchovies, sea urchins, grilled razor clams, bluefin tuna tartare and aged beef sirloin steak.

Every night he would get up, thank the staff and walk quietly back along Pau Claris.

De Niro wasn't the only one. Passing through Mut have been Pedro Almodóvar (who asked for a Russian salad and three servings of the same croquette dish), Antonio Banderas, Javier Bardem, Penélope Cruz, Ricardo Darín, Isak Andic, Amancio Ortega (on one occasion, with bodyguards included), Rafael Nadal, Pau Gasol and the legendary Ferran Adrià, who declared that Mut was "the best tapas bar in the world."

Politicians have also succumbed to its charm: from King Juan Carlos (when he was still reigning) to the presidents of the Catalan Government Pasqual Maragall, José Montilla, Artur Mas, Carles Puigdemont and Pere Aragonès.

The list is endless. For many, Mut is the place where power and art meet without protocol, with a glass of wine and an anchovy tapa.

The success of Mut led Kim Díaz to expand his gastronomic universe without losing the essence. These are the other bars in the group:

  • Morro Fi (Carrer del Bruc, 90): Opened in 2007, it's Mut's little brother. More informal, with music and a youthful atmosphere but equally demanding with the product.   • Le Bouchon (Carrer de Pau Claris, 116): Opened in 2017, it's a tribute to French bistronomy. Hare salad, paté en croûte, snails with parsley butter, Tarte Tatin and a selection of French cheeses. Intimate and romantic atmosphere. Phone: 934 67 93 18.
  • Fuego (Carrer de la Diputació, 175): Opened in 2024, it's the group's grill restaurant. Holm oak wood, charcoal and grilled products: artichokes, tripe, whole fish, aged meats. Outdoor terrace and bar for tapas. Phone: 935 18 78 00.

🍾  The gastronomy of Bar Mut: unadulterated market produce

The menu at Bar Mut changes daily. It is written by hand on a blackboard and on a paper that the waiter brings to you.

There are no complex dishes or impossible techniques.

There is product: Cantabrian anchovies, L'Escala anchovies, anchovies in vinegar, Mediterranean bonito, mackerel, smoked sardines, Riofrío caviar, sea urchins, razor clams, clams, wild sea bass, Almadraba Bluefin Tuna, 100% acorn-fed Iberian ham, cheeses from La Garrotxa, seasonal vegetables and aged meats.

Everything is served at its perfect point, with an excellent extra virgin olive oil and quality bread.

Wine is another religion: Mut has a cellar with more than 800 references, with special attention to whites and reds from the D.O. Priorat, Ribera del Duero and Rioja, as well as a selection of champagnes and artisanal cavas.

The average price per person is around 60-80 euros without wine, although you can eat perfectly well for 40-50 euros if you choose wisely.

Mut does not accept reservations for groups of fewer than 6 people. The policy is clear: you arrive, wait at the bar (sometimes more than an hour) and when there's a spot, you sit down.

There's no rush because time at Mut is part of the experience.
