Manzanilla is a dry white fortified wine, unique in the world. It is made from the Palomino Fino grape variety (locally known as Listán Blanco), which is grown in the albariza soils of the region, rich in limestone and with an exceptional capacity to retain moisture.
Its alcohol content ranges between 15 and 17 degrees, but its main hallmark is biological ageing under the flor veil.
This veil is a layer of yeasts that forms naturally on the surface of the wine inside American oak casks, protecting it from oxygen and giving it those pungent aromas and saline flavours that make it unique in the world.

The Harvest in Sanlúcar de Barrameda: the origin of Manzanilla and the Manzanilla Route
The Manzanilla Route can also begin in the vineyard. Palomino Fino grapes are grown in the albariza plots, dazzling white soils, poor in organic matter but with an extraordinary capacity to retain moisture, crucial in a region with long periods of drought.
The Harvest traditionally begins at the end of August, although climate change has brought the dates forward in recent years, seeking the optimum ripeness of the grapes.
