The Sanlúcar Prawn Route, the Most Exclusive Delicacy of Bajo Guía

🦐   At The Sun Places, luxury is also found in the small pleasures of the table. That's why we invite you to discover the Sanlúcar Prawn Route, a gastronomic journey through the temples of Spain's most exclusive seafood.

The Sanlúcar Prawn, with its unmistakable iridescent blue tail and its sweet and salty flavour, is a product of excellence that has become the emblem of the city. From the beach bars of Bajo Guía to the taverns of the Barrio Alto, we propose a unique route to discover the secrets of this treasure of the Guadalquivir.

With The Sun Places, we want this experience to be part of your luxury stay, offering you access to the best establishments and the best tables to taste the Sanlúcar Prawn at its exact point.

The Sanlúcar Prawn Route is much more than a gastronomic route; it is a journey to the heart of the city's fishing and culinary tradition. Sanlúcar de Barrameda, named Spanish Gastronomy Capital in 2022, is the cradle of this unique seafood, which is caught artisanally using the trammel net, a technique used since Roman times.

The Sanlúcar Prawn is different in flavour and texture, and its fame transcends borders. In this article, we guide you through the best places to enjoy it, tell you its history and secrets, and give you the keys to experience it with all the luxury it deserves.

The Sanlúcar Prawn season: when to do the Sanlúcar Prawn Route

The Sanlúcar Prawn Route can be done all year round, but there are times when the Sanlúcar Prawn reaches its maximum expression.

The month of June is considered the best time to taste it, coinciding with the start of summer and the greatest activity of the fishing fleet. However, there is also a resurgence in autumn, which makes Sanlúcar a top-level gastronomic destination for much of the year.

The highest catches are made in spring and early summer, with peaks in June.

If you want to experience the Sanlúcar Prawn Route at its finest, we recommend planning your visit between April and June, or during autumn, when the product is at its optimum point.

Bajo Guía: the heart of the Sanlúcar Prawn Route

Bajo Guía is the epicentre of the Sanlúcar Prawn Route. This waterfront promenade, located on the banks of the Guadalquivir and facing the Doñana National Park, is the showcase of the city's best seafood cuisine.

Here you will find some of the most emblematic restaurants, where the Sanlúcar Prawn is the undisputed king.

  • Casa Bigotes, with César and Fernando Hermoso at the helm as the third generation, is a temple of the Sanlúcar Prawn that combines tradition with audacity
  • Restaurante Mirador de Doñana offers Sanlúcar classics, such as boiled prawns, clams with garlic and seafood rice dishes
  • Other establishments such as Poma, La Lonja or Avante Claro complete an unparalleled gastronomic offering.

At Bajo Guía, the Sanlúcar Prawn is served in the most varied ways: boiled, grilled or chiguato, and always with a glass of manzanilla from Barbadillo Winery or Hidalgo Winery to pair.

Barrio Alto: the other side of the Sanlúcar Prawn Route

The Sanlúcar Prawn Route is not limited to Bajo Guía. Barrio Alto also offers an excellent gastronomic offering where the Sanlúcar Prawn is the star.

  • Although it's in the centre, at Plaza del Cabildo, Casa Balbino, known as "the temple of shrimp omelettes", also offers top-quality Sanlúcar Prawn
  • At the Posada de Palacio hotel, the El Espejo restaurant, run by chef José Luis Tallafigo, offers avant-garde cuisine linked to the territory, with fish and seafood among which the Sanlúcar Prawn stands out
  • Bar La Espuela II, specialising in fried fish, is another must-visit to taste Sanlúcar Prawn
  • Bar Restaurante La Campana, founded in 1947, is another classic where traditional seafood stews and Sanlúcar Prawns are the kings of the house

The Prawn Fair and other gastronomic routes

The Sanlúcar Prawn Route is complemented by events and fairs that highlight this product. The Sanlúcar Prawn Fair is an essential date held at the end of July at the Horse Races venue.

Organised by the Sanlúcar Fishermen's Guild with the support of the City Council, this gastronomic fair brings together the best restaurants in the city to offer tapas and dishes made with Sanlúcar Prawn.

In its second edition, the fair was held over two days and eliminated the ticket sales system to improve the visitor experience.

Another notable route is "Lo Mejor del Mar", which combines red tuna from the almadraba, Sanlúcar Prawn and Castillo de San Diego wine from Barbadillo Winery in a perfect pairing.

This route, held from 14 to 23 June, featured the participation of twenty emblematic establishments in the city and was sponsored by Fernando Bigote.

Events like these demonstrate Sanlúcar's commitment to its gastronomy and its desire to highlight its star product.
