📜The story of Kinu Sevilla, Sol Repsol 2026: The dream of La Bombonera Group

The vision of two friends, Lorenzo and Víctor, from Florence and Seville respectively, who met in the latter's city and devised, together with their partners Ornella and María, an unprecedented international tapas concept that they felt was missing in the city.

Thus, after the creation and launch of Islamorada Tapas Bar in December 2019, other key profiles such as Daniel, Clara, Miguel and Alex joined the project, contributing significantly to the birth of other brands such as Gelateria MITO, KINU and RICCA; brands that also brought concepts never before seen in the city on the Guadalquivir.

This is how Gelateria MITO was born, under the guidance of Master Gelato Maker Giuseppe Di Bella; bringing a three-generation gelato recipe that has been captivating the most demanding palates in Florence for decades and now also in Seville.

Today MITO has five shops, and in a few weeks, there will be 6 shops, and a production centre of more than two hundred square metres in the Los Remedios neighbourhood that will allow the brand to grow while maintaining the quality, flavour and processes necessary for it.

At the same time, the central Calle Miguel de Mañara saw the birth of KINU, the city's first omakase counter; its reputation has led the prestigious Repsol Guide at the 2026 Repsol Guide Suns Gala, to award it Seville's only SUN in 2026, making Kinu Sevilla, a 2026 Repsol Sun the great protagonist of Seville's gastronomic scene.

This brand, a paradigm of the purest Japanese tradition, represents the ambition of a team led by our Head Chef Maestro Hoze, who is eager to prove that it is a place worthy of pilgrimage for lovers of Japanese cuisine.

The latest to arrive has been RICCA Pizzeria which, inspired by KINU, has created on a spectacular red marble counter, what is the country's first omakase pizza tasting counter. Our pizzaiolos have everything ready to offer eight diners a unique experience based on pizza with seasonal ingredients imported from Italy, baked in Valoriani ovens, brought especially from Figline Valdarno (Florence), to number 26 on the central Calle Dos de Mayo.

RICCA also has a dining room with capacity for 50 diners where, in addition to pizzas and pastas, there is a varied menu with other typical Italian dishes and desserts that can be accompanied by cocktails, wines and beers also from Italy and its most popular regions.

Today, more than 80 people work every day with professionalism and enthusiasm to manage, consolidate and grow the authentic, different and honest concepts that make up La Bombonera Group.

Despite having been born and having its headquarters in Seville, the group is firmly committed to its expansion and will, when the time is right, take its concepts beyond the limits of the Andalusian capital, always under its founding principles, which consist of the exclusive use of high-quality raw materials, a specialised and ultra-professional service and the establishment of the different brands and their corresponding units in always central and unique locations in the city.

Kinu Sevilla, Sol Repsol 2026 is known, above all, for being Seville's first omakase counter. But what exactly does "omakase" mean? This Japanese word translates as "trust", and in the gastronomic field it implies that the diner places themselves in the hands of the chef (itamae) to decide what to eat at each moment, based on the best fresh products of the day.

The experience at the Kinu counter is a true ritual. With only six seats (two daily services), the itamae prepares a menu of between 15 and 20 courses that can cost up to 120 euros, with a sake and Jerez wine pairing option for 200 euros. Sitting at this counter is to witness a hypnotic culinary spectacle from the front row, where every cut, every gesture, is full of precision and meaning.

In addition to the counter, Kinu Sevilla, Sol Repsol 2026 has a dining room with around ten tables where you can enjoy a varied à la carte menu and a more affordable tasting menu (75 euros). They have also recently launched an executive menu from Monday to Friday for 40 euros.

Executive direction is in the hands of José Cerdá, known as Maestro Hoze, considered one of the most prestigious itamaes in Europe with his own omakase counter in Gothenburg (Sweden). He visits Seville approximately once a month to supervise and lead the counter, a highly anticipated event.

Talking about a single signature product at Kinu Sevilla is almost impossible, as the offering changes constantly with the season. However, there are several hallmarks that define its cuisine and that have contributed to it obtaining the Repsol Sun:

  • Andalusian-Japanese Fusion: They use top-quality local products, such as Motril shrimp, Huelva white prawns, Sanlúcar langoustines or almadraba red tuna, treated with Japanese techniques.
  • Balfegó Red Tuna: They age it in a cold room for up to 20 days to enhance all its flavour.
  • "Kinumisú": Their famous dessert, a version of tiramisu made with organic matcha tea instead of coffee and sake instead of liqueur.
  • Japanese Rice: They import it directly from Japan and give it exquisite treatment, keeping it at the right temperature in bamboo containers.
