✨ The Espetos de Marbella are much more than a recipe. They are a tradition that has transcended generations, an art that combines the skill of the espetero with the quality of the product and the magic of fire.
As the popular saying goes, "sardines, from Virgin to Virgin" — between the Virgin of Carmen (16 July) and the Virgin of Victory (8 September) — is the best time to enjoy this dish.
The technique of the espeto consists of threading fresh sardines onto a wooden cane (or stainless steel rods, increasingly common) and grilling them directly over wood embers, usually olive wood, which gives them an unmistakable aroma.
The name comes from the verb "espetar", which according to the Royal Spanish Academy means "to pierce meats or fish with a pointed instrument to subject them to the direct action of fire".
But the Espetos de Marbella are not just sardines. Although the sardine is the undisputed queen, in the most innovative beach bars they also espeta sea bass, sea bream, and even seafood, always with the same respect for tradition and the product.
📅 When is the best time to enjoy the Espetos de Marbella?
The season for the Espetos de Marbella begins with Easter and extends until October, but summer is undoubtedly the peak moment.
The months of July and August are the busiest, with beach bars overflowing and an incomparable festive atmosphere. If you are looking for a balance between good weather and fewer crowds, we recommend June or September.
The perfect time to taste the Espetos de Marbella is at midday, when the sun is at its highest and the fish has just arrived from the market.
But some people prefer sunset, when the sun sets in front of the coast and the smell of embers mixes with the twilight. In September, sunsets are especially spectacular.

📜 History of the Espetos de Marbella: a centuries-old tradition
The history of the Espetos de Marbella dates back to the 19th century. Although the exact moment of its birth is unknown, it is known that by the end of that century it had become a delicacy coveted by high society who came to the coast to taste it.
The origin of the espeto is located in the fishing neighbourhood of El Palo, in Málaga, when in 1882 a certain Miguel Martínez Soler decided to spear some sardines on canes and cook them directly over the fire for his customers. What was initially a practical solution became the star dish of beach bars all along the coast.
But the tradition of the Espetos de Marbella has even deeper roots. Writings from Muslim chroniclers already testified to the consideration of the sardine from the bay of Marbella as one of the most exquisite in all of Al-Andalus.
Historians agree that fishermen took advantage of the reed beds that grew along the beaches to "amoragar" (roast) leftover fish over a fire on the sand.
The word "moraga", which designates the beach party around the Espetos de Marbella, comes from the Mozarabic etymology "mawráq", whose meaning derived in the act of roasting with wood fire in the open air.
In 1885, the Espetos de Marbella received a royal endorsement: King Alfonso XII visited the La Gran Parada picnic area of Miguel Martínez, and upon observing how the monarch ate the fish with cutlery, the famous espetero told him: "Majestá, así no, con ló deó".
Since then, the tradition of eating the espeto with the hands, directly from the cane, has remained intact.
Today, the Espetos de Marbella are a symbol of Málaga's identity and aspire to be declared Intangible Cultural Heritage of Humanity by UNESCO.
The application, promoted by the Marbella Activa association, seeks to preserve the knowledge of a tradition that unites the culinary technique of seafaring people with the social celebration around the moraga.
🔥 The art of the espeto: secrets of a good espetero
Making good Espetos de Marbella is not an easy task. It requires skill, patience and a deep respect for the product. These are the secrets that every good espetero knows:
- The sardine: It must be fresh, medium-sized, neither too large nor too small.
- The cane: Traditionally made of wood, although many beach bars now opt for stainless steel rods, which are more practical and hygienic. In Marbella, the Sanjuán hardware store manufactures and exports steel espetos all over the world.
- The wood: Preferably olive wood, which gives a unique aroma.
- The embers: Neither too strong nor too weak. The fire should not touch the sardines.
- The salt: Coarse salt, and in some beach bars, seawater to enhance the flavour.
- The point: The espetero controls the cooking by turning the canes so that the skin is crispy and the inside is juicy.
In Marbella, the tradition of the espeto is lived intensely.
Every summer, competitions are held such as the II Food&Sun Festival, where the best espeteros of the Costa del Sol compete for the prize for the best espeto.
It is a way of publicising this profession and its secrets so as not to lose a tradition that dates back to the 19th century.
To accompany the Espetos de Marbella, nothing beats a fresh salad, a good local wine and, of course, a spectacular view of the Mediterranean.
