This small village in the Sierra de Huelva, with barely 2,200 inhabitants, has given its name to the most coveted ham in the world, a product born from the perfect balance between nature, tradition and the know-how of entire generations of artisans.

The production area is delimited by 31 municipalities that form an inhabited rural garden around the Sierra de Aracena and Picos de Aroche Natural Park, whose dehesas are declared a UNESCO Biosphere Reserve. This unique combination of microclimate, altitude and tradition has made Jabugo the world capital of Iberian ham.

📜 History of Jabugo Ham: from Lope de Vega to the PDO

The history of ham in the Sierra de Aracena goes back centuries. As early as the 16th century, Lope de Vega himself recorded the production of hams in this area in his works. In his Epistle to Gaspar de Barrionuevo (1604), the poet wrote about the "cured ham of a Spanish pig, from the famous Sierra de Aracena". This literary mention demonstrates that Jabugo's ham tradition has its roots in the Spanish Golden Age.

Jabugo's great leap came in 1879, when local businessman Juan Rafael Sánchez Romero founded the first ham industry in the municipality. At the beginning of the 20th century, the development of the railway line accelerated the sector's growth, consolidating a commercial network that took the star product of the sierra to Seville, Jerez, Cádiz and beyond. The reputation of this delicacy grew unstoppably, becoming synonymous with supreme quality.

In 1995, the Government of Spain recognised the "Jamón de Huelva" Designation of Origin, which was registered by the European Union in 1998. However, the fame of the name "Jabugo" was so great that producers continued to market their hams under this denomination. Finally, in 2017, the European Union approved the name change to Jabugo Protected Designation of Origin, thus protecting a name that is "the most recognised agri-food brand in Spain".

🏛️ The Jabugo PDO: the seal of excellence

The Jabugo Protected Designation of Origin is one of the most demanding certifications in the European agri-food sector. Only hams and shoulders that meet strict requirements can bear the PDO seal and label. These requirements include:

  • Racial purity: The pigs must be 100% Iberian, reared and fattened in freedom in the dehesa.
  • Exclusive diet: During the montanera, the pigs feed exclusively on acorns and natural pastures in the dehesas of holm oaks, cork oaks and gall oaks.
  • Natural curing: The curing process takes place in the unique microclimatic conditions of the Sierra de Huelva, in natural cellars where humidity and temperature remain constant.
  • Delimited geographical area: The production area covers the dehesas of Extremadura (Cáceres and Badajoz) and Andalusia (Seville, Córdoba, Huelva, Cádiz and Málaga), while the production area is confined to the 31 municipalities of the Sierra de Huelva.

The complete process, from pig rearing to final curing, can last more than four years. This time is the price of excellence, a reflection of the patience and care with which each piece is treated.

🐖 The production process: from the dehesa to the table

The production of Iberian ham is a ritual involving two fundamental figures: the farmer and the master ham curer. The former rears the Iberian pig in freedom in the dehesas, where the animal feeds on acorns during the montanera, the final fattening phase that takes place in autumn and winter. The livestock density is a maximum of 1.25 pigs per hectare, guaranteeing that each animal has the necessary natural resources.

After slaughter in winter, each limb is identified with the Jabugo PDO seal. The curing process then begins, following a strict protocol: surface salting, washing, settling or saline balancing, natural drying in drying rooms and, finally, maturation in natural cellars. During drying, the water content of the pieces is reduced thanks to the action of the sierra's air. During maturation, the sapid and aromatic components evolve slowly, giving rise to the unmistakable flavour and aroma of authentic Jabugo Ham.

🏆 The legacy of Jabugo: a village that lives for and by ham

Jabugo is much more than a name on a label. It is a village that has built its identity around ham. Its Plaza del Jamón is a permanent tribute to this product, and its economy revolves around the ham industry. With a population of around 2,200 inhabitants, Jabugo houses the cellars of some of the most prestigious companies in the sector, such as Cinco Jotas (5J), whose origins date back to the founding of the first industry in 1879.

In 2023, Jabugo was named Spanish Gastronomic City, a recognition of its role as a benchmark of national gastronomy. That same year, the residents bid farewell to the year with a very special "pre-bells": instead of grapes, they ate 12 slices of Jabugo PDO ham to the rhythm of the chimes. A gesture that perfectly sums up the link between the village and its most emblematic product.

In addition to ham, Jabugo offers a unique historical and natural heritage. Its urban centre, with cobbled streets and whitewashed houses, preserves the traditional architecture of the sierra. Among its buildings are the Church of San Miguel Arcángel and the building of the Jabugo PDO Regulatory Council, a work inspired by the style of Aníbal González. The natural environment, with the Sierra de Aracena and Picos de Aroche Natural Park, offers multiple hiking routes, including the themed routes for children known as "Jabugo de Cuento".
